Bacon Mushroom & Edamame Risotto

Creamy, warm and tasty, risotto is the perfect comfort food.⠀ This weeks budget meal comes in at approximately £1.50 per person depending on where you shop. Despite being economical, it is full of flavour and an excellent family crowd pleaser. The final result should be smooth creamy and wet and never dry or stodgy. So make sure you add enough stock, but don’t overcook. ⠀ Serves :- 4⠀ 250g arborio rice⠀ 1 litre hot chicken stock⠀ 200g bacon lardons ⠀ 250g mushrooms chopped ⠀ 3 onions finely diced ⠀ 3 cloves garlic crushed ⠀ 1 cup of cooked edamame beans⠀ 1 teaspoon butter ⠀ 2 tablespoons Parmesan grated ⠀ Optional basil to serve ⠀ Sauté the onion in olive oil until soft. Now add the garlic and lardons until the bacon is cooked. Add the mushrooms and cook through. ⠀ Pour in the rice and coat in the mixture. Cook for 2 minutes stirring frequently. Add a ladle of the hot stock, stirring occasionally until the rice has absorbed the stock, repeat this process until the rice is just cooked through and you have a moist risotto. Warm through the edamame beans adding a little more stock or hot water if the risotto is too thick. ⠀ Remove from the heat and stir in the Parmesan and the butter. ⠀
