A hearty yet super healthy vegetable one pot that can be made in under an hour. This Tagine will fill your house with amazing aromas of Moroccan spice. You can enjoy it on its own (as I think it covers every food group) with couscous, or with a lovely piece of crusty bread. ⠀ My carnivorous son demolished a portion without questioning where the meat was 😂 which I think is a good sign.⠀ This would make an excellent lunch the following day hot or cold.⠀ ⠀ ⠀ ⠀ Serves:- 4⠀ ⠀ INGREDIENTS ⠀ ⠀ 350g sweet potato cubed⠀ 2 red peppers roughly chopped ⠀ 2 red onions chopped ⠀ 4 cloves garlic crushed ⠀ 1 tablespoon Belazu’s Rose Harissa ⠀ 1 teaspoon ground cumin ⠀ 1 teaspoon zaatar⠀ 1 can of black beans rinsed and drained⠀ 1 can of tomatoes ⠀ 1 tablespoon honey ⠀ 1 preserved lemon roughly chopped ⠀ Salt & Pepper ⠀ Coriander & Pomegranate seeds to serve ⠀ ⠀ METHOD ⠀ ⠀ Start by sautéing the onions in olive oil until soft. Now add the garlic, peppers, sweet potato, Harissa, cumin and zaatar. Stir thoroughly and cook for roughly 3 minutes. Pour in the tomatoes, honey and preserved lemon then season generously. Fill the empty tin of tomatoes half way up with water and add to the pot. Stir, cover and simmer for 30 minutes. ⠀ Now add the black beans to the pot, stir and cook for another 10-15 minutes, making sure the the sweet potato is soft. If at any stage it gets dry then add a little water. ⠀ ⠀
