Many of you have asked me to come up with some packed lunch ideas, not only for children but for the whole family. So here are my Asian inspired, chicken noodle salad jars, which are balanced, healthy and super tasty. These can be tailored to any taste by following a mix and match formula. Leftovers are perfect for this, I used leftover chicken from my Sunday roast and raided the fridge for veg. Mine included, noodles, chicken, chilli, avocado, radishes, cucumber, spinach, sugar-snaps & mango.
I suggest including the following:-
Rice, noodles, pasta, boiled potatoes, roasted sweet potatoes, butternut squash, quinoa, couscous.
1 protein :-
Chicken, prawns, smoked fish, tuna, steak, ham, tofu, chickpeas, eggs, cheese, lentils, nuts, seeds.
4-5 vegetables / fruit:-
Peppers, tomatoes, grated carrot, spinach, mango, papaya, avocado, radishes, cucumber, apple, pears, roasted vegetables (such as aubergine, fennel, peppers)
2 cloves garlic - crushed
2 teaspoons grated ginger
Juice of 2 limes
2 tablespoons sesame oil
4 tablespoons soy sauce
1-2 red chillies - chopped
