A delicious way of getting more vegetables in your diet. These tasty Cauliflower taco’s are quick and easy to make and actually happen to be vegan.
Serves 4
INGREDIENTS
Marinade
1 clove garlic
2 teaspoons chipotle paste
2 teaspoons honey
Juice 1/2 lime
2-3 tablespoons olive oil
1 cauliflower - cut into florets
1 small red onion - finely sliced
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 red cabbage - finely sliced
1-2 avocados
Juice 1/2 lime
1 red chilli - sliced
8 soft tacos
2 tablespoons toasted flaked almonds
METHOD
Preheat the oven to 200 degrees.
Mix the marinade ingredients together in a bowl and add the cauliflower. Toss until fully coated. Add the cauliflower to a roasting tray. Season generously and roast for 20 minutes, or until tender and golden.
Add the onion to the vinegar and salt, mix and set aside.
Mix the avocado lime a little of the chilli and seasoning to a bowl and mash with a fork.
Dry fry or griddle the tacos for 30s on each side. Time to load up!
