Helen’s Chicken Traybake

I was speaking to one of my oldest school friends who now lives in New Zealand. Eating my usual usual bowl of Greek Yogurt and fruit for breakfast meanwhile on the other side of the world Helen was serving her family supper. Being the food obsessed girl that I am, I asked Helen what she was serving “Marbella Chicken” ......trying to push the cast from “The Only way is Essex” to the back of my mind 😂 I was intrigued to find out what this might be ...Helen told me what it consisted of and I knew I had to try. So here is my version of “Marbella Chicken “ Enjoy!

Serves 4

⠀⠀⠀⠀⠀⠀⠀⠀⠀

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

8-10 chicken thighs

1 red onion - sliced into 10 wedges

1-2 tablespoons capers

10 green olives

10-12 pitted prunes

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Marinade/sauce

2 cloves garlic - crushed

2 tablespoons red wine vinegar

1 large glass white wine

1 tablespoon honey

1-2 teaspoons dried oregano

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preheat the oven to 200 degrees.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Mix the marinade together in a bowl.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Throw all the other ingredients into a large roasting pan. Pour over the marinade. Season and into the oven for 35-45 minutes. If you remember then you can baste the chicken with the juices a couple of times during the cooking process, but not essential.
