Portuguese Piri Piri Chicken

The summer holidays are just around the corner, so I’ve decided to share a few holiday inspired recipes with you. Maybe you are staying in self catering accommodation this year? Or perhaps you just want to feel like you are on holiday at home. Today’s recipe is from Portugal 🇵🇹 and it’s the ever popular Piri Piri Chicken. Feel free to adjust the chilli content as a lot of children won’t like it too hot.⠀⠀

INGREDIENTS

⠀⠀ 6-8 Chicken thighs⠀⠀ ⠀⠀ ⠀⠀ Marinade/Rub ⠀⠀ 3 garlic cloves⠀⠀ 1-2 red chillies⠀⠀ 1-2 tablespoons smoked paprika ⠀⠀ 1 tablespoon Willies apple cider vinegar ⠀⠀ 1 tablespoon chopped parsley ⠀⠀ 1-2 tablespoons olive oil ⠀⠀ Squeeze of honey ⠀⠀ Salt/Pepper ⠀⠀

METHOD


⠀⠀ Blitz the marinade ingredients in a food processor or bullet. Loosen with extra oil if necessary.⠀⠀ ⠀⠀ Coat the chicken thoroughly and leave for 30 minutes if you can. ⠀⠀ Season and roast at 200 degrees for 30-40 minutes. ⠀⠀ ⠀⠀ Serve with lemon wedges and extra chilli.
