Royal Icing


500g icing sugar

3 egg whites

1 teaspoon glycerine (to stop it going to hard)


Add the icing sugar spoonful at a time until fully combined. Mix with an electric mix to get rid of any lumps for about 5-10 minutes or until you get stiff peaks. Adding the glycerine for the last minute.

Spread over the cake and smooth the sides with a butter knife. With the back of a spoon, swirl the icing around to look like snow drifts.

Decorate the icing while wet. Leave to dry.
