Here is another lovely idea for any Guy Fawkes party’s you may be having. Think of it as a more sophisticated, grown up hot dog. The onions and apples become sticky and sweet, almost jammy and the sausages have a gorgeous caramelised coating. Add a little bit of everything to a piece of baguette or a brioche hotdog roll - delicious!

Serves 4-6
INGREDIENTS
8-10 sausages
3 Apples - cored and cut into wedges
4 banana shallots - sliced
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Marinade
1 tablespoon olive oil
2 teaspoons whole grain mustard
1 teaspoon honey
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Optional tarragon to serve
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Preheat the oven to 190 degrees.
Mix the honey, mustard and olive oil in a small bowl. Add the sausages, shallots and apples to a large roasting pan, pour in the marinade and toss the ingredients until coated. Loosen with a little more oil If need be.
Place in the oven for 20 minutes, remove and turn over the sausages, spooning the juice over the ingredients. Back in the oven for 15-20 minutes. Sprinkle with tarragon leaves. Serve in crusty baguette or brioche hot dog rolls.
