Chilli, Ginger, Onion, Garlic & Cumin Roasted Brussels




I told you I was determined to find a sprout recipe for everyone. Perhaps this is the one for you?! Maybe as this year numbers are going to be smaller, this is the time to experiment? This would also make an amazing side to a turkey curry. Doing my best to keep perky about Christmas, but have to admit I’m feeling a little shell shocked. Hope you are all ok? INGREDIENTS

1 small onion - finely chopped

2 cloves garlic - crushed

1 teaspoon grated ginger

1 red chilli - finely sliced

1/2 teaspoon cumin seeds

330g Brussel sprouts - halved or left whole if they are the tiny variety

A squeeze of lemon


METHOD


Preheat the oven to 210 degrees.

Drizzle the sprouts with oil, season and sprinkle with cumin seeds and chilli. Roast for 20 minutes.


Sauté the onion until soft and sweet. Add the garlic and ginger and cook for a few minutes. Remove the sprouts from the oven and toss with the onion mixture. Squeeze with lemon and serve.
