Figs are just coming into season and I intend to enjoy them while they last. This is a gorgeous salad that was inspired by an old @jamieoliver recipe. I’ve tweaked it by adding a few extras. This salad took less than 10 minutes to prepare so a perfect light meal after a busy day. ⠀#nationalavocadoday ⠀
INGREDIENTS 1 small bag spinach ⠀ 1 pack Parma ham⠀ 4 fresh figs halved⠀ 2 tablespoons chopped hazelnuts⠀ 1 ball mozzarella torn⠀ 1 avocado sliced⠀ 8-10 olives ⠀ ⠀ Olive oil⠀ Belazu’s balsamic vinegar ⠀ Drizzle of honey
METHOD Start by scattering the spinach leaves on a platter. Now arrange the avocado, olives, figs and Parma ham. Drizzle with olive oil and balsamic. On each fig squeeze a little honey and sprinkle with hazelnuts. Season the salad and serve.
