Here is a lovely budget friendly midweek meal. Hearty, delicious, simple to make and something the whole family will enjoy.
Serves 4
3 banana shallots or 2 small onions - finely chopped
4-5 cloves garlic - crushed
1 pack of extra special sausages - snipped with scissors
1 tin or cherry tomatoes
350g dried orzo - cooked
Optional basil leaves torn
METHOD
Sauté the onions until soft, add the chopped sausages and cook until slightly browned. Add the garlic and cook for 1 minute. Pour in the tomatoes, check for seasoning, cover with a lid and simmer on a low heat for 15 minutes. Cook the pasta a little less than packet instructions. Drain. Add the pasta to the sauce, season with salt and pepper, sprinkle with basil and drizzle with olive oil.
