Why not make this quick and super easy Frittata using any leftovers? I’ve used frozen peas and ham, but left over Brussels would work brilliantly. A great breakfast, brunch or lunch, but also works well as a healthy cold snack.
1 small mug full of peas
2 handfuls of left over shredded ham
2 spring onions chopped
1 tablespoon herbs
1 tablespoon dried cranberries
Whisk the eggs together and season.
Add a a teaspoon of butter to a large sized nonstick pan. Add the peas and spring onions to the butter, followed by the egg mixture. Stir as if you were making an omelette. Add the cooked ham and herbs, stir until almost set. Transfer to an oven of 180 degrees for 10 minutes. Delicious hot or cold.
