⠀⠀⠀⠀⠀⠀⠀⠀⠀ For this recipe you could use halved bagels or English muffins. I chose crumpets which worked so well. The avocado and runny egg yolk tricked down into the tiny holes which for me was delicious! You can play around with toppings but the combination of soft #avocado, crispy #bacon and an egg was perfect 😊 ⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀ Per Crumpet 1 egg 1/4 avocado sliced 2 slices of streaky bacon 4 cherry tomatoes ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook the bacon however you like to do so, I fried it to ensure it was crispy and golden.
⠀⠀⠀ Roast the tomatoes for 10 minutes at 210 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Toast the crumpets in a toaster. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bring a medium pan of water to the slow simmer. Crack an egg into a small cup then into the simmering water with a quick movement. Leave for 3 minutes, then carefully remove using a slotted spoon. Drain on kitchen towel.⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Assemble the ingredients as in the photo.
