Salmon Fish Cake Sandwich

The Saucy Fish Co have a fantastic range of easy fish dishes which are delicious and also sustainably sourced. We are trying to encourage people to opt for a healthier/homemade alternative to a chippy tea on a Friday. Not only are these fish cakes from @thesaucyfishco healthier than regular fish and chips, they are delicious and extremely convenient. My tartare sauce and quick pea purée are divine and can be simply made in no time. Ok so here’s the fun part. We are in a mission for you to come up with your fun fish recipe using ​The Saucy Fish Co.’s​ ingredients. Can’t wait to see what you make! Serves 4

INGREDIENTS

4 soft rolls

Watercress / rocket and avocado to serve

​1 pack of The Saucy Fish Co. Salmon Fishcakes with a Creamy Lemon Centre


Tartare Sauce

2 tablespoons mayonnaise

1 teaspoon capers - drained and finely chopped 1 large gherkin - finely chopped

1 teaspoon finely chopped dill

1 clove crushed garlic



Pea purée (whizz in a bullet or blender until smooth)

1 mug of frozen peas defrosted

1 shallot

Juice 1/2 lemon

Seasoning


METHOD

Cook the ​fishcake​s according to packet instructions.

Mix the sauce ingredients together in a bowl.

Load up your sandwiches as you wish, but I used, rocket, pea purée and tartare sauce.
