Here is a lovely family midweek meal that is full of flavour and simple to make. Sometimes instead of potatoes I add beans or lentils, it really depends on how I’m feeling or what I have in my fridge. What do you put in your sausage casserole?

INGREDIENTS
8 Sausages -
1 tin of tomatoes or passata
3 onions chopped ⠀
3 cloves of garlic crushed ⠀
1 red pepper chopped ⠀
200g new potatoes
Salt/pepper/olive oil⠀
2 teaspoons smoked paprika ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 handfuls fresh spinach
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Start by browning the sausages, then set aside. Sauté the onions until golden for a rich flavour. Add the garlic, red pepper, potatoes and paprika. Return the sausages to the pan. Pour in the tomatoes/passata, season and simmer for 1.5 hours mins on a low heat.
Stir in the spinach and serve.
