You know I am a huge fan of anything from Belazu particularly their rose Harissa paste 😍 ⠀
Two spoonfuls of this paste transforms these Salmon fillets into something really delicious. This entire meal can be pulled together in literally 15 minutes which is perfect after a busy day. ⠀

INGREDIENTS

2 Salmon fillets ⠀
2 teaspoons Belazu’s Rose Harissa ⠀
10 cherry tomatoes on the vine⠀
⠀
Quinoa Salad ⠀
1 pouch of pre-cooked mixed quinoa ⠀⠀
100g finely chopped spinach ⠀⠀
2 spring onions finely chopped ⠀⠀
1 clove garlic crushed ⠀⠀
1 tablespoon olive oil ⠀⠀
Juice 1/2 lemon ⠀⠀
METHOD
⠀ Coat the salmon fillets in the Harissa paste and season. Roast for 8 minutes at 210 degrees. Leave to rest for 2 minutes.⠀ ⠀ Drizzle the tomatoes with olive oil, season and roast for 10 minutes. ⠀ ⠀ Mix the quinoa salad ingredients together and drizzle with the lemon and olive oil. Make sure the garlic is evenly distributed. ⠀ ⠀
