⠀⠀⠀⠀⠀⠀⠀⠀⠀ A quick and easy vegetarian meal that will leave you thoroughly satisfied. Black beans are an amazing superfood loaded with all sorts of health benefits. I love using them in stews, salsas and salads.
⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4 large soft tortillas 250g grated cheese (I used a mixture of cheddar and mozzarella) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Black Bean Salsa 1 tin black beans - drained and rinsed 1 avocado 1/2 red onion finely chopped 10 cherry tomatoes chopped 1 red chilli finely chopped (optional) 2 tablespoons chopped coriander Juice half a lime 1 tablespoon olive oil Salt and pepper ⠀⠀
⠀⠀⠀⠀⠀⠀⠀ Place one tortilla in a large frying pan. Put in half the cheese (spread it out evenly) and a 2-3 tablespoons of the black bean salsa. Top with another tortilla and press down lightly. Place on a medium-high heat. Cook for a few minutes on each side or until the cheese is melted. Be careful as you turn the tortilla. Repeat the process. Remove from the pan and using a pizza wheel or sharp knife cut into roughly 8 triangles. Serve with any remaining salsa. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
