Bonfire Sausage Chilli

Carrying on with #nationalsausageweekhere is my alternative to a chilli con carne. Perfect for any bonfire night parties you may have planned this weekend. We will be eating this and drinking lots of Mulled wine - recipe to follow. I have incorporated black beans, but you can use any type you fancy and I’ve used @thejollyhog proper porkers for this tasty recipe. Perfect for anyone who can’t tolerate gluten. #glutenfree #freefrom ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Serves 4⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 8 Sausages - I used @thejollyhog 800g passata Tin of Black beans - rinsed and drained 200g Butternut squash - peeled and chopped 3 onions chopped ⠀ 3 cloves of garlic crushed ⠀ 1 red pepper chopped ⠀ Salt/pepper/olive oil⠀ 1 teaspoon smoked paprika ⠀ 1 teaspoon mild chilli powder 1 teaspoon cumin 1 red chilli finely chopped

⠀⠀⠀⠀⠀⠀⠀⠀⠀ METHOD

Start by browning the sausages, then set aside. Sauté the onions until golden for a rich flavour. Add the chilli, garlic, red pepper, squash and spices. Return the sausages to the pan. Pour in the passata, season and simmer for 1.5 hours mins on a low heat. Now add the beans and simmer for a further 20 mins. ⠀ Scatter with your herb of choice.⠀ ⠀⠀⠀⠀⠀⠀⠀
