1 cauliflower - broken into florets
50g plain flour
250g strong cheddar cheese
Preheat the oven to 200 degrees.
Add the cauliflower to a roasting dish, drizzle with oil season and roast for 20 minutes.
To make the white sauce, melt the butter on a medium low heat, then add the flour. Stir in a low heat for 5 minutes making sure there are no lumps and being careful not to colour. Turn the heat right down and carefully pour in the milk drop at a time and stir to incorporate. When fully mixed in repeat the process until fully combined. Keep stirring and allow the sauce to thicken. Continue cooking on a low heat until the sauce is thick and glossy with no raw tasting flour. Remove from the heat and stir through the cheese. Stir until completely melted. Season and pour over the cauliflower. Cook for a further 15 minutes or until golden.
