Roast Tomato, Olive, Garlic & Chilli Pasta


Here is another delicious, simple, budget friendly dish which works beautifully. By roasting the tomatoes, it really helps intensify the flavours, leaving with you something totally delicious to eat.


Serves 2

INGREDIENTS


200g dried pasta


500g super sweet tomatoes, I used cherry and plum - cut in half

4 cloves garlic - whole

1 chilli finely sliced

2 handfuls of black olives

2 tablespoons extra virgin olive oil

1 tablespoons balsamic vinegar

Salt / pepper

Basil & Parmesan to serve


METHOD


Preheat the oven to 210 degrees C (conventional)


Add the tomatoes, olives, garlic and chilli to a roasting tin. Drizzle with olive oil and balsamic. Season generously. Toss and roast for 20-25 minutes.

Cook the pasta in salted water according to packet instructions.  Drain and toss into the roasting tin. Serve with basil and grated Parmesan.
