As you know I like to simplify the cooking process and I love a good cheat, don’t we all? This trifle can be put together in 10 minutes and there is absolutely no skill involved, it’s more a matter of construction. This year I have simplified it further buy using the rich and delicious vanilla yogurt. You can use any liqueur you like, I always have something lurking at the back of the drinks cabinet that’s perfect for this occasion. This dessert can be made the day before and kept in the fridge.
2 shop bought jam Swiss rolls
1kg Fresh Shop bought custard
1/2 jar strawberry jam
2 large pots of Greek Style Vanilla yogurt or whipped cream
1 punnet strawberries hulled and sliced
4 tablespoons sherry
Slice the Swiss roll and place it at the bottom of a large bowl. Drizzle the sponge in sherry. Spread the jam over the Swiss roll. Now layer the strawberries on top of the jam. Pour in the custard and top with the vanilla yogurt. Chill until needed.
