Chicken Tikka Kebabs and Raita



AD | Yogurt and Indian cuisine is a match made in heaven. Not only does the yogurt help tenderise the chicken, it also balances the spices beautifully. It’s no secret that I am a fan of Tims Dairy Limited The quality is exceptional and I’ve been buying it for years. I am delighted to be developing recipes for them and celebrating their stunning new re-brand.

INGREDIENTS

Serves 4

800g boneless chicken thighs - cut in half

2 red Romano peppers - chopped into chunks

1 red onion - cut into wedges

Marinade

2 tablespoons Tims Dairy Natural Greek Style Yogurt

1 tablespoon tomato purée

3 cloves garlic - crushed

3 teaspoons grated ginger

2 teaspoons smoked paprika

1-2 teaspoons chilli powder

2 teaspoon ground cumin

1/2 teaspoons turmeric

Raita - mix together in a bowl

2 tablespoons Tims Dairy Natural Greek Style Yogurt

1/3 cucumber - grated or finely chopped then drained on kitchen towel

2 cloves garlic - crushed

1/2 teaspoons ground cumin

1/2-1 teaspoon honey

1-2 tablespoons finely chopped coriander

Salt & pepper

METHOD

Preheat the oven time to 210 degrees.

Mix the marinade ingredients together in a large bowl. Add the chicken and leave to marinate for 30 minutes. Thread the chicken, peppers and onions onto the skewers. Drizzle with oil, season and cook in the oven for 35-45 minutes.
