Chicken, Vegetable & Chickpea Traybake


Here is a healthy chicken Traybake loaded with late summer vegetables and nutritious chickpeas. I’m always on the lookout for brilliant, delicious, shortcuts to help simplify the cooking process and these ready to eat pouches of chickpeas from Oddpods Foods certainly tick that box. This crowd pleaser was thrown together in less than 5 minutes and left to work its magic in the oven. Enjoy! [AD]

2 cloves garlic

Juice 1/2 lemon

2 teaspoons smoked paprika

Dash of olive oil to loosen


8 Chicken Thighs

2 red peppers - roughly chopped

3-4 courgettes - chopped into chunks

1 red onion - cut into 8 wedges

1 pouch of chickpeas

1 corn on the cobs - each cut into 2



Preheat the oven to 200 degrees.

Mix the marinade ingredients in a bowl and add the chicken. Leave for 30 minutes. Add everything except the corn and the chickpeas to a large roasting dish. Drizzle with oil and season generously. Cook in the oven for 30 minutes. Remove from the oven and stir in the chickpeas. Add the corn, and roll in the delicious juices. Place back in the oven for another 10-15 minutes.
