Chinese Chicken

This was one of my half-term specials using just 4 ingredients that evolved after a fridge raid. I don’t often like to use shop bought sauces, but on this occasion I’m glad I did as it got the 2 thumbs up from both boys and I enjoyed a portion too. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Serves 3-4 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 8 Chicken Thighs 3 spring onions chopped 1/2 cucumber sliced into matchsticks 3 tablespoons hoisin sauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀ METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Coat the chicken in the sauce and season generously. Place in a roasting dish and cover with foil. Roast 25 minutes at 200 degrees, remove the foil and toast for a further 10-15 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Sprinkle with the spring onion and cucumber and serve with white rice.
