Christmas Dinner Tray Bake

As the Christmas Season rapidly approaches I am preparing my list of delicious recipes to share with you. Here is the first of many festive treats I’ll be posting. Christmas dinner (ok it’s not turkey) cooked in one pan..... what not to love? ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Serves 4


INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

1kg Chicken Thighs

300g brussel sprouts trimmed and washed

5-6 parsnips peeled and quartered lengthways

1 red onion cut into 8 wedges

12 mini pigs in blankets - I used ready made

1 whole garlic clove (optional)

Cranberry sauce to serve - my recipe is coming soon


METHOD

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Place the parsnips in a large roasting tray. Drizzle with oil and roast at 210 for 20 minutes. Now add everything else except the sprouts and pigs in blankets, season and roast for 15 minutes. This time add the sprouts and sausages. And roast for another 20-30 minutes.
