Many of you have asked what you can do with all of the courgettes that you have grown over lockdown? Courgettes are lovely, simply sautéed with garlic olive oil, salt & pepper. Roasted with grated Parmesan to make the most amazing (and healthy) zucchini fries, or perhaps you’d like to try these utterly delicious courgette fritters? Ready in 15 minutes, these were a total joy to eat.

Serves 2
INGREDIENTS
2 large courgette - grated
1 teaspoon - ground cumin
1 egg
1 1/2 tablespoon self-raising flour
1 teaspoon Aleppo pepper / Pul biber or chilli flakes
Salt & pepper

Herby yogurt - mixed together in a bowl
1 clove garlic - crushed
2 tablespoons Greek yogurt
1 tablespoon chopped mint leaves / coriander or both

METHOD
Grate the courgette and squeeze in kitchen roll to remove as much water as possible. Do this a few times, the dryer the better.
Mix the fritter ingredients together in a bowl. Form into 4 patties and dust in a little extra flour.
Pan fry in oil until golden on each side - roughly 3-4 minutes on each side on a medium heat.
