Figs, Burrata & Pistachio Pesto

My lovely friend Amy popped over for an impromptu lunch last week and this is what we enjoyed. Pulled together in minutes leaving us time to catch up properly. Figs are amazing right now, what are you waiting for?!

Serves 2



80g fresh basil

50g pistachio nuts - shells removed

30g Parmesan - grated

1-2 cloves garlic

Juice 1/2 lemon

1 teaspoon honey

150-200ml olive oil

Salt & Pepper

4 fresh figs

1 ball Burrata

2 handfuls of salad leaves


Blitz the pesto together in a mini chopper. Drizzle over the salad ingredients.
