Garlic Butter Chicken

Why on earth have I not made this before is all I can say?! This throw together Traybake is super simple and a great one to get the kids involved with. Definitely one I will make again. Who’s going to give it a go?

Serves 4


Garlic Butter

100g Butter - room temperature

1 tablespoon chopped parsley

4 cloves garlic - crushed

8 chicken thighs

400g new potatoes - sliced into quarters

1 lemon - sliced


Preheat the oven to 210 degrees. Mix the garlic butter ingredients together in a bowl. Add the potatoes to a large roasting tin. Drizzle with a little oil and toss the potatoes. Now place the chicken in the pan, adding 1/2 a teaspoon of garlic butter underneath each piece of chicken and 1 teaspoon on top. Add the lemon slices and season generously. Cook in the oven for 40-45 minutes basting once during the cooking time. Serve with a green salad with lots of lemon juice.
