Healthy Chicken Tikka Masala

Thank goodness it’s Friday! I don’t know about you but I really find these dark mornings and evenings a struggle at this time of year. At least tonight I know we can have a cosy night in with this healthy chicken tikka Masala made using @timsdairyyogurt and a few glasses of wine.



Serves 4-6


INGREDIENTS


1 kg skinless boneless chicken thighs - cut into 3

1 can coconut milk

1 tin tomatoes

3 tablespoons Tims Dairy Greek Yogurt

2 onions finely chopped

4 cloves garlic crushed

1 red chilli finely chopped

1 tablespoon grated ginger

1 tablespoon tomatoes purée

1 tablespoon honey


Spices


2 teaspoons smoked paprika

2 teaspoons cumin

2 teaspoons ground coriander

1 teaspoon medium curry powder

2 teaspoons garam masala

Pistachio nuts to serve (optional)



METHOD


Start by sautéing the onions until soft and golden. Add the garlic and ginger for a few minutes.


Coat the chicken in the spices and add to the pan stirring to thoroughly disperse the spices. Cook for 5 minutes. Add the coconut milk, tomato purée and tomatoes, stir and bring to a gentle simmer. Simmer for 1 1/2 hours. Add the yogurt and warm through. Sprinkle with pistachios. Serve with, basmati rice.
