Isle of Wight Tomato & Burrata Salad, with Pistachio Pesto Dressing


AD | In case you missed it, on Thursday I hosted a live cook-a-long with @yellowtailuk, pairing my prawn pasta to a chilled glass of their delicious Chardonnay (see how to make it in my highlights).

Food and wine has always brought people together and that can still happen - even if virtually! [yellow tail] believes in bringing people together and that wine’s best enjoyed with those you love, so if you’re short on time ahead of your next virtual get together or family hang out in the garden, I’ve also created this quick and easy dish. It’s a beautiful salad which can be pulled together in minutes, is perfect served with crusty bread, and also pairs beautifully to [yellow tail]’s Chardonnay. With seasonal produce this good, it’s really best to keep it simple!

Serves 4-5

INGREDIENTS

750g Mixed Tomatoes - sliced

3 burrata

1 handful rocket

Pesto

METHOD

Blitz together the pesto ingredients in a mini chopper or bullet.

Drain the Burrata on a kitchen towel. Add the tomatoes and rocket to a large platter. Top with Burrata, season and drizzle with pesto dressing.
