Mangalore Roasted Coconut, Chicken & Chickpea Curry

Before I started my food blog I used these convenient curry kits all the time. So I was delighted to be sent a selection from the @thespicetailor to have a play with. My store cupboard is packed full of pretty much every herb, spice and condiment under the sun 😂 but I know that’s not the case for everyone. These curry kits are fantastic, as there is just enough of each spice for the recipe and they are kept fresh in air tight pouches. Free from artificial flavours and preservatives, what’s not to love?

Serves 6

INGREDIENTS

2 onions - finely chopped

3 cloves garlic - chopped

800g boneless chicken thighs - cut into 3

1 can chickpeas - drained and rinsed

Coriander to serve

METHOD

Start by sautéing the onions until soft and golden. Then add the garlic and chicken, season generously and coat in the base sauce. Cook for 5 minutes to get a little colour. Add the main sauce and loosen with a little water if needed. Simmer with the lid on (on a low heat) for 1 hour add the chickpeas and cool for a further 15 minutes.

Serve with rice or Indian bread.
