Marinated Halloumi with Honey, Lemon & Thyme

This would make a delicious starter on its own or as part of a lovely table of meze. Grilled, barbecued, or pan fried halloumi is lovely, but by adding this delicious marinade/dressing it really takes it up a notch! Who’s going to hip this one a go?

Serves 2 as a starter


1 block halloumi - sliced

2 handfuls olives

1 tablespoons pomegranate seeds


1 tablespoons honey

1 tablespoons chopped fresh thyme

Juice 1/4 lemon

Salt & pepper


Mix the marinade ingredients together in a bowl. Add the halloumi and leave for 20 minutes.

Pan fry the halloumi on each side until golden. Remove from the pan and quickly add the rest of the marinade to the pan to warm through. Pour over the halloumi, add olives, pomegranate seeds and extra thyme. Serve immediately.
