I’ve been trying to upload an IGTV video all day and still no luck, so I’ve given up and am posting this lovely 15 feel good meal. I hope you like it.
Serves 2
INGREDIENTS
2 salmon fillets
3/4 cucumber - shaved lengthways with a peeler
3 tablespoon white condimento or 2 tablespoons white wine vinegar and 1/2 teaspoons caster sugar
1 tablespoon sesame seeds (black or white)
Coriander and 1 green chilli to serve
Marinade
1 teaspoon miso paste
1 tablespoon soy sauce
2 teaspoons honey
METHOD
Preheat the oven to 210 degrees
Mix the marinade ingredients in a bowl and coat the salmon. Place the salmon on a baking sheet, sprinkle with 2 teaspoons of the sesame seeds, season and cook in the oven for 8-10 minutes.
Add the cucumber ribbons to a bowl and drizzle with the condimento.
Remove the salmon from the oven and plate up. Sprinkle with more sesame seeds, coriander and chilli.
Serve with rice or noodles.
