This one is aimed at my student friends as it’s ridiculously simple to make, but also budget friendly. At £2.50 per portion, it hopefully free’s up a bit of cash for a few pints at all those freshers parties that are about to happen. The mum speaking here also hopes it will line your stomach before you go out too! As always this is not just for the students as we all like a tasty easy traybake for many reasons. If you haven’t got all of the ingredients then work with what you’ve got! Who’s going to give this one a go?
Marinade
Juice 1/2 lemon
3 cloves garlic - finely chopped or crushed
3 teaspoons honey or 1 teaspoon sugar
3 teaspoons smoked paprika
1 teaspoon dried oregano
1/2 tablespoons oil
Salt & pepper
8 chicken thighs
2 sweet potatoes - each cut into 8-10 wedges
2 corn on the cobs - each cut in half
3 whole chillies - optional
Coriander - optional
METHOD
Preheat the oven to 200 degrees celsius (conventional) 180 degrees celsius (fan)
Mix the marinade ingredients together. Add everything to a large roasting tray. Coat in the marinade. Drizzle with a little extra oil, season and roast for 35-45 minutes.
