One Pot Sausage & Tomato Pasta!

As you know I LOVE a good pasta dish, but the only downside is that it can create a fair bit of washing up. Let me introduce you to my one pot pasta recipe! Ridiculous I know but I’m really excited about this 🤣 it’s honestly revolutionary - particularly for you busy parents.

We’ve just about made it through lock down, and what seems the longest school holiday in history. If you are anything like me, you have had enough of stacking the dishwasher, so please do give this family friendly recipe a go. It got the thumbs up from my gang, let me know what you think?

Tips - make sure you use a large pan and use the mini shaped pasta or it will take longer.

Serves 4

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

3-4 onions finely chopped ⠀⠀

5 cloves of crushed garlic ⠀⠀

Pack of good quality lean sausages ⠀⠀

2 tins of chopped tomatoes or passata

2 tins of water⠀⠀

250g any small shaped pasta

Parmesan cheese grated⠀⠀

Extra boiling water

⠀⠀⠀⠀⠀⠀⠀⠀⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Caramelise the onion in olive oil on a low heat with salt and pepper, then add garlic. With scissors, chop the sausages into the pan. Stir the sausages into the onion mixture to get a little colour, being careful not to burn the onion. Season generously and add the tins of tomatoes, the 2 tins of water stir and simmer on a low heat with the lid on for about 30 minutes. Pour the dried pasta directly into the sauce. Bring to a simmer and cook for approximately 20 minutes, storing here and there. Obviously every type of pasta absorbs liquid differently, so if you think the sauce is drying out and the pasta is not cooked, then top up with a touch of boiling water as you would a risotto. Serve with Parmesan.
