These quick and easy tarts always go down a treat and I particularly enjoyed this combination of flavours. The goats cheese could easily be replaced with feta, mozzarella or creamy Brie. Homemade pesto would obviously be nice, but I actually used a good quality shop bought.

INGREDIENTS
1 sheet of ready rolled puff pastry
1 tablespoons pesto - I like @belazu_co
80g goats cheese
200g cooked prawns - drained on kitchen towel
4 spring onions - finely chopped
1 egg - beaten

METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 200 degrees (conventional) 180 degrees (fan)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Open up the pastry and score around the perimeter (roughly 2cm from the edge) Prick the inner base with a fork. Spread the pesto inside the perimeter. Add all of the toppings. Brunch the perimeter with egg wash and cook in the oven for 15-20 minutes.
