Pulled BBQ Duck Buns

I made these about a month ago over the Fathers Day weekend and they went down a storm. I would highly recommend creating these as a lunch or as a starter. Perhaps I should have made the buns from scratch 🙈 but honestly I wouldn’t bother as these shop bought were delicious!

Serves 4 as a lunch or 6 as a starter

Marinade

2 tablespoons ketchup

2 tablespoons soy sauce

1 tablespoon Worcester sauce

1 tablespoon honey

2 cloves garlic - chopped

⠀⠀⠀⠀⠀⠀⠀⠀⠀

4 duck legs

1/3 cucumbers - chopped into matchsticks

3 spring onions - chopped into matchsticks

1 chilli - chopped into matchsticks

Coriander to serve

12 Bao Buns - @marksandspencer

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preheat the oven to 200 degrees.

Mix the marinade together and coat the duck leg. Season and place in the oven for 20 minutes. Now turn the oven down to 170 degrees and cook for another 1 - 1.5 hours or until the duck is tender. Rest for 20-30 minutes and pull apart with 2 forks.

Warm up the buns according to pack instructions. Stuff the buns with the duck, cucumber, chilli and spring onion. Sprinkle with coriander.
