Retro Prawn & Avocado Cocktail

Who can’t resist a Prawn Cocktail when you see it on a menu? My version took under 10 minutes and can easily be made in advance for a dinner party. You can use whichever prawns you like, but I enjoyed the mix of tiger and small prawns.

INGREDIENTS 140g cooked tiger prawns ⠀ 200g small cooked North Atlantic prawns⠀ 4 tablespoons of mayonnaise (I used Hellmans) 5 drops of Tabasco ⠀ 1-2 teaspoons ketchup ⠀ 1 Avocado diced⠀ Lumpfish roe (optional)⠀ Lemon wedges ⠀ 1 bag mixed leaves⠀ METHOD⠀ Mix the mayonnaise, Tabasco and ketchup in a bowl. Add the prawns and avocado saving some for decoration. ⠀ Put a small amount of leaves in the bottom of a glass, followed by the prawn cocktail mix. Top with the roe and garnish with prawns and a lemon wedge.
