Roast Cod with Puy Lentils, Spinach & Vine Roasted Tomatoes

I’m a huge fan of these @merchantgourmetpre-cooked grains and pulses. They are a great way of simplifying cooking when you are short on time. You can add them to one pots, roasts and they are when fantastic added to salads. Since I’ve discovered these pouches, they are a staple on my weekly shopping list. This is a nutritious and healthy meal that can be pulled together in under 15 minutes. Perfect for a delicious midweek treat. ⠀ Serves 2⠀ INGREDIENTS⠀ 2 pieces of Cod (I sourced my fish from Sankey’s Fishmongers in Tonbridge)⠀ 2 shallots or 1 onion finely chopped ⠀ 1 packet of Merchant gourmet puy lentils⠀ 1 small bag fresh spinach ⠀ 1 clove crushed garlic ⠀ METHOD

Roast the vine tomatoes drizzled with a little oil, salt and pepper for 10 mins in a hot oven of 210 degrees. ⠀ Sauté the shallot or small onion until soft. Now stir in the garlic for 2 minutes. Add a packet of pre-cooked beluga lentils. Gently warm through, then wilt a small pack of fresh spinach into the lentils. Season and drizzle with a little olive oil. ⠀ Drizzle the seasoned cod with olive oil, then roast in a hot oven for 10 minutes. Leave to rest in the cooking pan for 2 minutes and plate up.⠀
