Salmon, Scallop & Cod Gratin



Serves 4-6 INGREDIENTS

1 medium onion - finely chopped

2 cloves garlic - crushed

400g Fresh salmon - cut into large chunks

200g cod - cut into large chunks

200g raw tiger prawns

200g raw scallops

2 tablespoons chopped dill

100g grated Parmesan

150g bread crumbs - I used dried

Salt & pepper


570ml cheese sauce

500 ml milk

25g plain flour

50g butter

50g cheddar or Parmesan


METHOD

Preheat the oven to 200 degrees (conventional) 180 degrees (fan)


Cheese sauce

Melt the butter and add the flour to make a roux. Stir on a low heat for a few minutes. Remove from the heat and pour in the milk drop at a time, beating as you go to remove any lumps. Continue until it’s fully incorporated. Return to a low heat and stir and cook until it’s thickened and it’s not floury anymore. Turn off the heat and stir the cheese in until it’s fully melted.


Sauté the onion and garlic until soft and add to the sauce. Add the dill and all of the raw fish and stir to combine. Add the mixture to an oven dish, add the breadcrumbs and cheese and cook for 15-20 minutes or until golden and bubbling.
