Shakshuka

Get your Sunday off to a great start with this North African vegetarian egg dish. It’s healthy delicious and full of lovely goodness.⠀ ⠀ Serves 3-4⠀ ⠀ INGREDIENTS ⠀ ⠀ 1 tbsp olive oil⠀ 1 red onion, peeled and diced⠀ 3 clove garlic, crushed ⠀ 1 red pepper , seeded and chopped⠀ 1 tin tomatoes ⠀ 10 mixed cherry tomatoes roughly chopped ⠀ 2 tbsp tomato purée ⠀ 1 tsp mild chili powder⠀ 1 tsp cumin⠀ 1 tsp paprika⠀ Pinch of cayenne pepper⠀ 2 tablespoons chopped olives⠀ Pinch of sugar (optional)⠀ Salt and pepper⠀ 6 eggs⠀ 2 tbsp fresh chopped herbs ⠀ ⠀ METHOD ⠀ ⠀ Sauté the onion for 5 minutes or until soft. Add the garlic and chopped pepper, season and cook for another 5 minutes. Add all of the spices and tomatoes, olives and purée and simmer until the peppers are soft and flavours have infused.⠀ ⠀ Make 6 little wells for the eggs and crack them into each hole. Cook for a couple of minutes on top of the oven then transfer to a hot oven for 4-5 minutes or put a lid on until the whites have set. ⠀ ⠀ Serve with crusty bread.⠀
