Southern Indian Fish Curry

I am often drawn to Southern Indian cuisine by its aromatic and tropical flavours. Coconuts are naturally abundant in the area, consequently, coconut milk, cream and the flesh are used in many of the fantastic dishes. Here is my coconut and fish curry. You can use any white firm fish you like, for this recipe I used sustainable Pollock. This curry can be made in less than 30 minutes and is a super healthy choice.â € â € Serves 4â €

INGREDIENTS

â € 520g pollock fillet (cod or haddock would work)â € 150g raw prawns â € 6-8 large raw prawns shell onâ € 2 X 160ml cans coconut cream â € 2 small onions finely chopped â € 4 cloves garlic crushed â € 1 thumb sized piece of ginger grated â € 1 red chilli finely chopped â € 10 okra sliced into 5 pieces â € Coriander to serveâ € â € Spices â € 1 teaspoon turmeric â € 2 teaspoons cumin â € 2 teaspoons ground cumin â € 2 teaspoons ground coriander â € 2 teaspoons medium curry powder â € 4 cardamom podsâ € 1 teaspoon mustard seedsâ €

METHOD


⠀ Start by sautéing the onions until soft and caramelised. Then add the garlic, chilli and ginger. Cook and stir for approximately 2 minutes. ⠀ ⠀ Add all of the spices to the pan and cook for 1 minute stirring occasionally. Add the okra and cook for 5 minutes. Add the coconut cream to the pan and stir. Bring to gentle simmer. ⠀ ⠀ Add the prawns and fish to the pan, stir, cover and simmer for 10 minutes. ⠀ ⠀ Serve with rice.⠀
