A comforting crowd pleasing midweek meal which comes is at approximately £1.40 per person depending on where you shop. Carbonara is always gratefully received in my house from everyone. My children are always so hungry after school and I know that I can knock this up in under 20 minutes! I know a purist would say no onion in carbonara, but I say it adds sweetness and flavour and just makes it more interesting. ⠀ ⠀ Serves 4⠀ ⠀ INGREDIENTS
⠀ 400g spaghetti ⠀ 200g bacon lardons ⠀ 1 onion finely chopped ⠀ 2 cloves garlic crushed ⠀ 3 eggs whisked and seasoned with salt and pepper @clarencecourt⠀ 100g fresh peas⠀ 3 tablespoons grated parmesan ⠀ ⠀ METHOD ⠀
While the water for the pasta is boiling, start sautéing the onion and garlic until soft. Add the lardons and cook through. Add the peas and warm through. Cook the pasta in salted water according to pack instructions. ⠀ ⠀ Whisk the eggs together. ⠀ ⠀ When the pasta is cooked, remove from the water with tongs into the bacon mixture. Don’t worry about any excess water (you want this to happen) mix with the bacon, onion and peas, adding 2 tablespoons of cooking water. Remove from the heat and pour in the eggs and Parmesan. Mix until the spaghetti is thoroughly coated in sauce. Serve
