So what if I told you this chilli didn’t contain meat? Instead this amazing chilli is filled with lots of lovely nutritious goodness. Let me tell you my kids are super sleuth’s and are totally spoilt rotten as far as food is concerned. They both devoured this and didn’t even mention a thing about it not containing meat! It brings me great joy to have one over on them 😂 especially if I know they are getting this much nutritional benefit and with a few simple swaps. Serves 4
INGREDIENTS
2 red onions - finely chopped
5 cloves garlic - crushed
3/4 cup red lentils
1 red chilli - finely chopped
2 peppers - chopped
2 small sweet potatoes - peeled and diced
1 tablespoons smoked paprika
2 teaspoons mild chilli powder
2 teaspoons harissa
1 tin tomatoes
700ml Knorr Vegetable Stock
1 tin black beans - rinsed & drained
2 handfuls of fresh spinach
AVOCADO SALSA (mix together)
1 avocado - finely chopped
1 red chilli - finely chopped
1/2 red onion - finely chopped
1 tablespoons chopped coriander
Juice 1/2 lime
2 tablespoons olive oil
Salt /pepper
METHOD
Sauté the onions until soft, add the garlic, chilli and lentils, season and stir. Add all of the veggies, the paprika, chilli powder and harissa and stir. Pour in the tomatoes and Knorr vegetable stock and simmer with a lid on for 1 hour 1/2 - 2 hours adding the black beans for the last 20 minutes. Remove from the heat and stir through the spinach. Serve with rice and avocado salsa.
