Chargrilled Aubergine Pesto Pasta with Burrata & Basil

AD | Now more than ever we are all creating recipes from our store cupboards. Here is a silky aubergine pasta recipe made using a gorgeous Chargrilled Aubergine Pesto from @sacla_uk 2 aubergines, onions and garlic.

Served with an optional beautiful burrata on top, which I have to say was divine. Mozzarella, Parmesan or Feta would all work well too.

Serves 4


1 medium onion - sliced

2 aubergine - chopped into 2cm chunks

2-3 cloves garlic - crushed

Olive oil

1 jar Chargrilled Aubergine Pesto @sacla_uk

200-250g dried pasta

1 Burrata

Basil & pine nuts to serve


Preheat the oven to 200 degrees. Add the onions, garlic and aubergine into a pan, drizzle with plenty of olive oil, toss, season and cook in the oven for 20 minutes. Meanwhile cook the pasta according to packet instructions. Remove the aubergine from the oven and stir through Sacla' Char-Grilled Aubergine Pesto. Add the pasta and a little of the cooking water to loosen. Season and toss. Sprinkle with pine nuts, basil and top with Burrata. Delicious hot or cold.
