Chicken Leek & Potato Tray Bake

Here is another winter warmer made using vegetables from @blas_y_tir which is 100% owned by the farmers. I know how popular these tray bakes are as the can be thrown together quickly after work, they are packed with delicious flavour and create very little washing up. Perfect for a family meal.

Serves 4

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

4 Chicken Legs

400g new potatoes @blas_y_tir

3 leeks - washed tough outer leaves removed and chopped into large chunks

1 small onion sliced

3 cloves garlic crushed

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preheat the oven to 210 degrees

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Start by adding the potatoes to a large roasting tray. Drizzle with olive oil and season. Roast for 20 minutes. Remove and add the onions, garlic and leeks, give it a good mix and top with the chicken, skin side up. Drizzle with a little more oil and season generously. Roast for 45 minutes and serve.
