Christmas Dinner Traybake



Ok so not the total full works, but my goodness this was easy and loaded with lovely flavour. It even created its own gravy at the bottom of the pan. Maybe you fancy something festive in the lead up to Christmas, or perhaps you have a smaller crowd this year? Ready in 1.5 hours and all cooked in one pan, it’s definitely worth a go.

INGREDIENTS

Serves 4

1 medium chicken

1/2 lemon or clementine

2-3 large potatoes - cut into 4cm chunks (skins left on)

5 whole garlic cloves

12 small pigs in blankets

320g Brussel sprouts

Cranberry sauce - to serve

A very large roasting tin

METHOD

Preheat the oven to 210 degrees (conventional) 180 degrees (fan)

Add the potatoes garlic and chicken to a pan, drizzle with oil and season. Add the lemon to the cavity of the chicken. Roast for 1 hour. Remove from the oven and now add the pigs in blankets and Brussels. Cook for another 30 minutes. Remove from the oven and spoon over cranberry sauce.
