Greek Chicken Traybake

Each week I like to come up with a new Traybake recipe as they are always so popular and they are then featured regularly in so many of your households. With holiday season just beginning I thought I’d make one inspired by the flavours of Greece. Who’s going to try this?

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

400g small new potatoes

8 chicken thighs

2 small red onions - each cut into 8 wedges

2 cloves garlic - crushed

2 red peppers - roughly chopped

1 lemon - sliced

Juice of 1/2 lemon

1 teaspoon dried oregano

8-10 olives

20 cherry tomatoes

100g feta cheese - crumbled

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Preheat the oven to 210 degrees.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Add the potatoes to a large roasting pan, drizzle with oil, season and into the oven for 20 minutes. Remove from the oven and add everything except the tomatoes and feta. Season generously and into the oven for 30-35 minutes. Remove from the oven and add the tomatoes and feta. Place in the oven for a further 10 minutes. Serve with a green salad.
