Halloumi & Blackberry Salad

Just over a week ago I had the pleasure of visiting @hughlowefarms for a tour of their strawberry and blackberry farms. It’s funny as I’d actually been buying these Driscoll’s Victoria Sweet Blackberries from @waitroseandpartners but hadn’t realised exactly where they were grown. People associate blackberries with being very tart with too many seeds and tend to put them into jams and puddings. This variety are large, super sweet, pops of juiciness and perfect for snacking or adding to recipes. Definitely worth a try. [AD]

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Dressing

4-5 sweet blackberries

1 clove garlic

3 teaspoons red wine vinegar

1 teaspoon honey

1 tablespoon olive oil

Salt and pepper

⠀⠀⠀⠀⠀⠀⠀⠀⠀

1 Block halloumi - sliced

150g Sweet Blackberries

1 bag of mixed salad leaves

2 courgettes - sliced into ribbons with a vegetable peeler

1 tablespoon chopped coriander

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Blitz the dressing ingredients together and set aside.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Pan fry the halloumi in a little oil until golden, roughly 1 minute on each side.

Arrange the salad ingredients in a large bowl. Add the halloumi, drizzle the dressing and sprinkle with coriander.
