I literally made a huge batch of this Mac & Cheese for my ever hungry teenager. He could then scoop a portion out, warm it in the microwave and eat whenever he felt peckish. The addition of bread crumbs and a small amount of garlic gave this great flavour and a lovely texture. If you want to take it to the next level then a drizzle of truffle oil to finish is delightful 😋
225g uncooked macaroni
50g butter
2 1/2 tablespoons plain flour
275g grated mature Cheddar cheese
50g grated Parmesan cheese (Pecorino for a vegetarian option)
750ml milk
30g butter
50g dried breadcrumbs
1 clove garlic crushed
Cook macaroni 3 minutes less than the package directions. Drain.
In a saucepan, melt 50g butter over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses (keeping a little for later) and garlic and cook over low heat until cheese is melted and the sauce is a little thick. Remove from the heat and add the cooked macaroni to the sauce and stir well. Transfer to an oven dish, sprinkle with breadcrumbs and a little more cheese. Bake at 200 degrees for 20 minutes.
